Sapphire engagement rings are typically mixed with a diamond in the setting.  This can be a more traditional setting than solely sapphire rings.  This classical look often has a very substantial setting, and is often set high above the band of the ring allowing the maximum amount of light possible to enter from the bottom of the ring to show off the many facets of the sapphire and diamond stones.

By far the most expensive of all sapphires is the star sapphire.  Their price is a result of their extreme rarity.  The luminescent star in their center is caused by inclusions, tiny imperfections in the heart of the stone.  These inclusions must intersect at precisely the right angle in order to form the correct pattern.  In the highest quality stones, this results in a perfect six-pointed star set into the center of the stone.
